It can tolerate drought, flooding, shade, and prolonged, direct sunlight. If you have not noticed, I only like tough plants that are easy to grow! Throughout North America, it is mostly grown as a "die-back" plant. It grows spring through fall, and it dies back in the winter. It will grow back in the spring. It is a perennial. The foliage is a fantastic way to give your garden a tropical look. As you can see by the pictures, it is one of the best plants for promoting peaceful rest for tree frogs. The blooms are delicate and exotic. The plant is a permaculture staple. Cattle, pigs, and goats are fed the mature plants. It is used as silage (outperforming corn in trials). It is a great biomass. Many different parts of the plant are edible. It is famous for the arrowroot-like starch in its tubers (rhizomes), offering an easily digestible starch that is so large that it can be seen with the naked eye. The rhizomes are baked whole, young or old. Immature seeds are good; they are traditionally eaten in tortillas. Young plant shoots are used as well. I only use shoots less than 10 inches tall. The young shoots have over 10% protein content! They can be cooked in southern-style greens recipes, used in soups, or added to stir fries. I also add them to my omelettes. The leaves are large.
