Redroot pigweed (Amaranthus retroflexus), also known as pigweed amaranth, is a common summer annual herb. This is yet another fabulous edible (and delicious) plant that is considered a weed by most of Big Ag. But this lowly "weed" is actually very nutritious, and is a great wild edible plant that every part can be eaten. The roots, the leaves, the seeds...... all of it. This plant is native to the tropical Americas, but it has been introduced to also every continent in the world. In the US, this plant is mainly used as livestock fodder, especially for hogs and pigs, hence its name. I had someone tell me once that this plant was dangerous to livestock, but I have not personally found evidence of that. That said, do your own research before feeding it to your livestock animals. I DO however know for a fact that humans are absolutely able to eat this plant and it's super nutritious. It can be cooked like spinach, leaves eaten raw, roots added to soups and stews, and seeds used as a flour grain. Pigweed Amaranth is rich in vitamins A and C as well as other important minerals, such as iron, manganese, calcium, zinc, copper, and magnesium. Adding pigweed into your daily diet can improve your health and immunity immensely. Consuming pigweed is SAID to help alleviate fever, headache, nausea, stomachache, and other digestive disorders. Moreover, pigweed leaves have astringent properties. For that reason, tea made from these leaves can help treat sore throat, and to control bleeding. You can also use the tea topically to treat cuts, rashes, scrapes, and insect bites.
